Sumario: The rice cereal is considered the most consumed worldwide (DICTA, 2013) with an estimated per capita consumption for 2013 of 56.8 kg (FAO, 2014). Given the importance, rice must meet parameters set by the quality standards of each country (Libore, 2013), which involve industrial and cooking quality of rice, involving different methodologies and testing protocols that generate information the breeder, which works to get a product that meets the needs and demands of consumers, also lab-quality rice is a source of information and data source impacting essential to the process of improvement, where criteria for assessing the quality of a rice line focus on the analysis of grain yield, grain appearance, white center, grain length, determination of amylose and baking test (Martinez, C and Cuevas, F, 1989) . With this, it aims to establish promising lines according to the needs of consumers and industry.
