Sumario: Currently, the variety of dry bean white Cargamanto, presents a deterioration of its color features in commonly used storage conditions, which in turn, reduces its quality and lowers its sale cost. Th is study identifi ed the eff ect packing conditions had on the color of the white Cargamanto dry bean grain (P. vulgaris L.); and evaluated the over the time impact of the treatments applied (packaged with light and oxygen, packaged without light and with oxygen, packaged without light and oxygen, and packaged with light and without oxygen) on the behavior of the CIEL *a*b* coordinates and in turn, on the attributes derived chroma (c) and tone (h), was evaluated over time.
