Sumario: In the following work, the solution to the problem related to wastewater discharged from a bakery plant will be presented. In the Department of Atlántico through the design of a Fat Trap, in order not to incur the total non-compliance of resolution 0631 of 2015 regarding the parameter of Fats and Oils, if it is the case, the appropriate solution for the problem of the problem, which is constant of the design of two, Fat Traps that operates in parallel to avoid the process in the cleanings when it is required, that is to say, it is only possible to work with a Fat Trap and when it has a layer of snow thick of about 3 cm, it should be something like a deep cleaning so the available trap will be used. This measure is viable because the percentage of removal that was obtained was 78.3%, based on this result; it was possible to perform the relevant calculations for the sizing of the traps. Of grease and the selection of equipment and accessories necessary to carry out the process, taking into account its technical, economic and environmental feasibility. In the development of the work, you can observe in detail the way in which the samples were taken and the results obtained.
