Sumario: This paper aims to illustrate the results of the physico-chemical characterization of vinasses resulting of the alcohol production in a liquor industry through sugar cane. Important parameters are presented for determining the quality and evaluation of treatment options for this subproduct, such as the boiling point, density, among others, and parameters relevant to the issue of liquid discharges, under Colombian law, such as pH and titration curve.
