Sumario: This thesis focuses its objectives on the feasibility of marketing the extra virgin avocado oil in the city of Quito. In order to do this, a synthesis of eatable oils, their characteristics and health benefits was completed; along with specific information about the avocado and the extra virgin avocado oil, indicating the benefits. In order to have product-specific data, a market study was conducted in Quito. This study was based on surveys, from which we obtained information such as frequency and purchase intent; as well as product characteristics such as presentation type and price. The obtained information was used in the technical and financial studies. The technical study determined the location, optimal plant size, availability and cost of inputs, identification, description of the process, and the legal and environmental necessities required for building a company.
