The objective of the present work was to identify and quantify the fatty acids present in goat's milk by gas chromatography coupled to masses and to determine the influence that the lactation period and the age of the animals can have on them, for which 30 goats were of the Saanen breed were sampled of the La Pampilla farm, located in the Yaruqui parish of the Quito canton in the north of the province of Pichincha.
Data were analyzed under a DCA (completely randomized design) with 10 replicates for the factor under study lactation periods and 5 replicates for the factor under study age.
Sixteen fatty acids were found with the following participation percentages: hexane 0.48%, octanoic 0.82%, decanoic 4.86%, dodecanoic 3.37%, tetradecanoic 9.88%, pentadecenoic 1.09%, 9 hexadecenoic 0.91%, hexadecanoic 25.59%, heptadecanoic 0.53%, 8-11 octadecanedioic 2.28%, 9 octadecenoic 25.45%, 8-octadecenoic 0.53%, 11 octadecenoic 3.36%, 9 -12 octadecanoic acid 15.04%, 9-12-15 octadecanetrienoic acid 1.31%, eicosanoic acid 0.17%.
Variance analysis determined that the factors studied, age and lactation period are not related to the fatty acids found, however the presence of unsaturated fatty acids that are beneficial to health make it attractive for human health such as Oleic acid and linoleic acid, in addition they exist in greater quantity regarding the cow milk. |
