This research is an economic analysis of an implementation of Good Manufacturing Practices (GMP) in artisanal cheese factories in Cayambe, belonging to Association of Dairy Producers in the Middle of the World, this research was done together with the Community Relation Department in Polytechnic Salesiana University that provided technical evaluations made by an engineer who is expert in GMP from initial stage and the second phase when applying them.
Relevant data about productions and monthly incomes in each cheese factory was collected through surveys applied to 21 members from ASOPROLAMM as long as guidelines for designing an accounting tool called Cost Sheets that let make a complete analysis of costs in each productive plant when making artisanal cheese, considering that each main axis in order to get the real information in costs. Once you get the incomes versus the costs we get the final investment in GPM.
The experiences and the everyday activities of each member of ASOPROLAMM provide in a productive way for this research because it resulted in a real view of the present situation in an economic, social and cultural aspect in which they are involved. |
