Globally, the raw foodborne diseases have been a major factor for humanity, given
that most vegetables have an intrinsic microbial load. However it has not reduced the
consumption of vegetables like lettuce, resulting in subsequent infections and
intoxications due to high content of microorganisms and heavy metals. In this study,
microbiological and heavy metals analysis was performed on lettuce Lactuca sativa
samples from thirty markets of the Metropolitan District of Quito. Samples were
collected randomly and size, color, weight was measured (length: 13.35-20.20 cm,
diameter: 30.20-39.10 cm, color: green and weight: 854.22-373.13 g), then a physical
chemical characterization was performed, resulting on average values: 3.79 °Brix
(soluble solids), 0.12% titratable acidity, 6.67 pH, 96.3% moisture y 1.00% ash,
proving that the results match the reference literature. On the microbiological analysis,
high amounts of Escherichia coli were found on all the samples, resulting in (UFC/g)
which surpasses the microbiological limits established on the norm elaborated by
Moragas and Busto. On the other hand, cadmium and lead levels were low in reference
to Codex. Concluding that the samples measured do not have the required quality for
human consumption. |
