The research was to analyze the variability of the physicochemical composition (nutritional composition) of goat milk (Capra hircus) based on the productive parameters and the food consumed. The analyzes were carried out with MILKOSCAN equipment FT 6200 and medium range infrared spectrophotometry. Samples were taken in a total of 80 to 120 goats from the Saanen breed of the La Pampilla farm, located in the Yaruqui. Analysis of variance was performed to verify the existence of significant differences between the parameters evaluated and the lactation period, the age of the cattle and the sampling. A highly significant difference in protein and lactose content was found for the lactation period and it was significant for MUN content and somatic cell count. In terms of age, only a significant difference was observed with respect to total solids and non-fatty solids. The bromatological analysis of the grass and concentrate supplied to the cattle in study showed deficiencies, which shows an unbalanced feeding. Comparing the composition of goat milk with cattle milk, lactose, fat, protein, total and non-fat solids levels were found in similar ranges, unlike MUN, CCS and CBT, which were higher in cattle goat. It is recommended to carry out similar studies evaluating additional parameters of quality, feeding, that can influence the composition of the milk, as well as, improve the hygienic conditions of the farm and supply a food suitably balanced for the needs of this cattle. |
