Sumario: The present investigation it made with the objective to identify taxa of yeast in the fruit of mortiño (Vaccinium floribundum Kunth) with fermentative capacity and alcoholic resistance, establishing the viability of yeast through microscopic analysis and Neubauer tests, based on this, determining the resistance of the selected yeasts to different concentrations of ethanol, to characterized morphologically as and biochemically yeast, using standardized tests Remel. 52 yeast strains fruits of mortiño (Vaccinium floribundum Kunth), which were identified by their morphological characteristics of both the colony, and its cells, which, by the method of prefermentation, 3 strains showed optimal growth was isolated and characterization of localized two on the genus Saccharomyces and a strain belonging to the genre Candida, by the dilution method 2 strains were identified with significant growth belonging to the genera Saccharomyces and Brettanomyces.
