Sumario: To the north of the country of Pichincha, in Ayora, canton Cayambe was formed the Federation (before Union) of Popular Organizations of Ayora-Cayambe, UNOPAC some years ago. Ten communities, six neighborhoods and an association of women are affiliated to the organization. The members of the communities are rural people of the region that have, most of them, their properties in the skirts of the mount called Cajas that it is between the country of Pichincha and Imbabura toward the north. The organization UNOPAC has a factory that turns grain to obtain flour, and especially the flour of a traditional meal in the area, called "Uchujacu". For Uchujacu, they are needed six vegetable species at least: corn (Zea mays), barley (Hordeum vulgare), wheat (Triticum vulgare), pea (Pisum sativum), lentil (Lens culinaris) and bean (Vicia faba).
