Sumario: The main objective of the research was to estimate the amount of Water Footprint (WF) that covered the water needs of the crops of quinoa (Chenopodium quinoa) of the cantons of Cayambe and Riobamba, starting from a scheme of calculation based on the methodology described in the manual of the Water Footprint Network (WFN) and of the United Nations Organization for Agriculture and Food (FAO), where the information obtained was processed through the CROPWAT 8.0. Be delimited 6 plots with a join area of 0,85 ha, that had different types of provision of water for irrigation and rain, and they had organic certified seeds; that produced in Cayambe a few 15,13 ton/ha in 0,59 ha and in Riobamba were equal to 6,92 ton/ha of 0,26 ha; and that allowed to calculate the values of WF blue and green for plot and for canton. Finally, they translated into results of WF total average of 356,49 and 98,49 m3/ton, for Cayambe and Riobamba, respectively; indicating a higher consumption of blue water that green; and in addition, the sum of these, it gave a value of 454,98 m3/ton, considered as an WF date of quinoa at the national level. Ecuador is the third producer of quinoa in the world, which has shown an increase in commercial demand, due to its high nutritional value; however, no studies have been performed of the components of WF; and therefore, it was intended to generate information with results on this product in these localities of the country.
