A general vision of the conventional and agroecological-agricultural systemwith emphasis on the processing, distribution and access stages is presented. The overall study is lined up in the quantificationof the water and carbon footprint in order to develop a comparative life cycle analysis among products of conventional origin in opposition to its similar ones of agroecological origin.
The Manual for the Evaluation of the Water Footprint for the calculation of the water footprint was used as a methodological guide; On the other hand, the study was also based on the stipulations of the ISO standards for the calculation of the carbon footprint and life cycle analysis, the latter in conjunction with the CML method for the quantification of environmental impacts.
The study would allow to know the carbon footprint and indicators of the LCA of the potato and broccoli (agroecological and conventional), is in function of the processes of transport of vegetables. The water footprint on the other hand for the phases analyzed has been influenced by the water expenditure existing in the vegetable washing sub-process. |
