The present project consist on the improvement of the existing continuous process in the company Moderna Alimentos S.A. as with the operator´s ergonomics, the high temperatures inside the plant and the previous leavened that is generated in the bread by the higher heat that exists in the molds of bread. For that reason, we´ll show a series a series of design data and implemented calculations to improve the time production and the change of generated temperature.
Having a based methodology, that we have adequately selected, we made the acquisition of data like time, temperature, tools resistance which can analyze the better option for the correct operation of the cooler chamber for the bread molds by the worker.
For this, a study was made to create a design for the bread mold cooler chamber and comply with the proposed objective, as well as to keep the product´s harmlessness
We carried out the dimensioning of each one of the elements that take part in the optimization, such as the walls of the cooling chamber, the diameter of the air extractor and the position of each one of the flutes located inside the cooling chamber. With each one of them the pertinent calculations were made that allowed us to assure the correct sizing and functioning of the project in general. |
